Souvlaki and Tzatziki

Tonight’s Demo – for Cooking in the Kerkhof Kitchen

SOUVLAKI BBQ SKEWERSINGREDIENTS
1 kg or 4 chicken breasts, cut in cubes
1/3 cup white wine
4 tbsp extra virgin olive oil
4 tbsp lemon juice
1 tbsp lemon zest ( I did not have any, so I skipped it!)
2 tbsp Greek yogurt 
3 garlic cloves, finely minced (Iused A Spice Affair Granulated Garlic)
2 tbsp A Spice Affair Souvlaki Seasoning 

For Serving
Red Onions, sliced – I used Vidalia
Cherry tomatoes, halved – I used fresh tomato
Lemon wedge – I forgot to drizzle it with Lemon!

Pita bread  – I used Naan bread

PREPARATION

  1. Mix all ingredients together and let the chicken cubes marinate in the fridge overnight or for 2-3 hours.
  2. Thread the chicken pieces on the skewers ( I also added chunks of vidalia and orange adn yellow peppers to the skewer)
  3. Preheat a BBQ or griddle pan on high heat. Cook the chicken for 10 minutes (5 minutes per side). Keep turning the chicken to ensure it cooks through from all sides.
  4. Serve in pita bread with a squeeze of lemon juice, a drizzle of olive oil, onion slices, fresh tomatoes and our delicious Tzatziki!

I used the package of Cheeky Tzaziki

1 cup Greek Yogurt

2 Tbsp of the mix

thinly shredded some cucumber and squeezed out the extra liquid and added about 1/2 cup of that

Could also add a bit of GPS

Take the meat and veggies off of the skewer, right into the naan then top with sliced tomato cucumbers and some tzaziki

and enjoy!
