Pesto Chicken Pizza
Here’s my recipe for the homemade Pesto
2 cups fresh basil leaves
½ cup grated Parmesan cheese
½ cup toasted walnuts (or sunflower seeds if you prefer)
2–3 cloves garlic
½ cup olive oil
Juice of ½ a lemon
½ tsp A Spice Affair GPS (Garlic, Pepper & Salt)
½ tsp A Spice Affair Italian Herbs
Directions:
Toast your walnuts in a dry pan for a quick boost of flavor!
Add all ingredients (except the oil) into a food processor and pulse.
Slowly drizzle in olive oil until you get that silky, dreamy pesto texture.
Taste, adjust, and try not to eat it all before serving!
Now for the pizza
Use pre baked or not baked crust
Pesto Chicken – cut up 1 chicken breast into cubes – add to fry pan with 1 Tbsp of each: Lemon Juice, Olive Oil, Soy Sauce and A Spice Affair Italian Blend
Fry chicken til cooked and juice is absorbed.
Brush pizza crust with a layer of pesto
top with mozzarella cheese

and then pick what other toppings – Red onions, tomato, peppers, mushrooms
Served with carrot sticks and A Spice Affair Ranch Dressing
